Chile Colorado
Ingredients:
For the Sauce:
- 6 dried guajillo chiles
- 3 dried ancho chiles
- 4 cups hot water (for soaking chiles)
- 1 ½ cups beef broth
- 4 garlic cloves
- 1 small onion, chopped
- 1 teaspoon cumin powder
- ½ teaspoon oregano
- Salt and pepper to taste
For the Meat:
- 2 tablespoons oil
- 2 pounds beef stew meat (like chuck), cut into chunks
- Salt and pepper, to season the beef
- 1 cup beef broth (extra, for cooking)
Instructions:
- Prepare the chiles:
Remove stems and seeds from the dried chiles. Put them in a bowl and cover with hot water. Let them soak for 20-30 minutes until soft. - Make the sauce:
Once the chiles are soft, drain them. Put the soaked chiles, beef broth, garlic, onion, cumin, oregano, salt, and pepper in a blender. Blend until the sauce is smooth. Set aside. - Cook the beef:
Season the beef chunks with salt and pepper. In a large pot or Dutch oven, heat oil over medium-high heat. Add the beef and cook until browned on all sides. - Add the sauce:
Pour the blended chile sauce into the pot with the browned beef. Add an extra 1 cup of beef broth. Stir everything together. - Simmer the stew:
Bring to a boil, then lower the heat. Cover and simmer for about 1.5 to 2 hours, or until the beef is very tender. Stir every now and then. - Serve:
Serve hot with rice, beans, or warm tortillas.
Tips & Tricks:
- You can strain the sauce after blending if you want it extra smooth.
- Make it spicier by adding a dried arbol chile.
- This dish tastes even better the next day.

- 2 tbsp oil
- 2 lbs beef stew meat (chuck), in chunks
- Salt & pepper
- 1 cup beef broth
Instructions:
- Remove seeds from chiles. Soak in hot water 20–30 mins.
- Blend chiles with broth, garlic, onion, cumin, oregano, salt & pepper until smooth.
- Season beef. Brown it in oil in a large pot.
- Add chile sauce and 1 cup broth to beef. Mix well.
- Bring to boil, then simmer covered for 1.5–2 hours until tender.
- Serve hot with rice, beans, or tortillas.
Tips & Tricks:
Strain sauce for smooth texture, or add spicy chile for heat. Best enjoyed the next day!
