Marry Me Chicken
Ingredients:
- 3 boneless, skinless chicken breasts
- Salt and pepper (to season)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- ¾ cup chicken broth
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- ½ teaspoon red pepper flakes (optional)
- ½ cup sun-dried tomatoes (chopped)
- 1 teaspoon dried oregano
- Fresh basil (optional, for garnish)
Instructions:
- Prepare the chicken:
Pat the chicken breasts dry with paper towels. Sprinkle salt and pepper on both sides. - Cook the chicken:
Heat olive oil in a large pan over medium heat. Add the chicken breasts and cook until golden brown on both sides (about 5–6 minutes per side). Take the chicken out and set it aside. - Make the sauce:
In the same pan, add the minced garlic and cook for about 30 seconds. Then pour in the chicken broth and use a wooden spoon to scrape up any brown bits from the bottom of the pan. - Add cream and cheese:
Stir in the heavy cream, Parmesan cheese, red pepper flakes, sun-dried tomatoes, and oregano. Let the sauce cook for a few minutes until it thickens slightly. - Return chicken to pan:
Place the cooked chicken breasts back into the pan. Spoon some of the sauce over the top. Cover the pan and let it simmer for 10–15 minutes on low heat, or until the chicken is cooked through. - Serve:
Garnish with fresh basil if you like. Serve hot with pasta, mashed potatoes, rice, or bread.
Tips & Tricks:
- Use chicken thighs instead of breasts if you want juicier meat.
- Double the sauce if you’re serving with pasta or rice.
- Leftovers taste great the next day!

Instructions:
- Season chicken with salt and pepper.
- Brown chicken in oil on both sides, then remove from pan.
- Cook garlic for 30 secs, then add broth and scrape the pan.
- Add cream, Parmesan, red pepper, sun-dried tomatoes, and oregano. Stir until sauce thickens.
- Add chicken back, spoon sauce on top, and simmer covered for 10–15 mins.
- Garnish with basil and serve.
