Italian Friselle Recipe

INGREDIENTS:

  • 1 kg plain flour
  • 30 grams fresh yeast
  • 1 cup olive oil
  • 1 tablespoon salt
  • One tablespoon fennel seeds

DIRECTIONS:

  1. Mix yeast with some warm water and let dissolve.
  2. Combine all other ingredients in a large bowl then add the yeast mixture.
  3. Add enough water to make a soft dough but not sticky .
  4. Knead for five minutes and allow to rest for one hour while covered .
  5. Turn onto a board or bench and make bagels as in the photos , allow to rest for another 45 minutes.
  6. Place on tray and bake at 190c until slightly golden but not fully cooked .
  7. Allow to cool for 10 minutes then slice in half with a small serrated knife.
  8. Place in oven again until golden and crunchy.
