Air Fryer Potato and Onion

This is a quick and tasty side dish made with just potatoes, onions, and basic seasonings. The air fryer makes them crispy on the outside and soft inside—without needing much oil. Great as a side for breakfast, lunch, or dinner!


Ingredients

  • 2 medium potatoes (any kind), diced into small cubes
  • 1 medium onion, sliced or chopped
  • 1 1/2 tablespoons olive oil (or any cooking oil)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional, for color and flavor)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (or to taste)
  • Fresh herbs (optional – like parsley or chives, for garnish)

Instructions

  1. Prep the Potatoes:
    Wash and peel the potatoes (optional). Cut them into small cubes so they cook evenly and quickly.
  2. Prep the Onion:
    Slice the onion thinly or chop into bite-sized pieces.
  3. Season:
    Put potatoes and onions in a large bowl. Add oil, garlic powder, paprika, salt, and pepper. Toss well until everything is coated.
  4. Preheat Air Fryer:
    Turn on your air fryer and preheat to 380°F (195°C) for 3 minutes.
  5. Cook:
    Add the potato and onion mix to the air fryer basket in a single layer (do in batches if needed). Air fry at 380°F (195°C) for 18–22 minutes. Shake the basket or stir the mix every 5–7 minutes to cook evenly.
  6. Check for Doneness:
    The potatoes should be golden and crispy, and the onions soft and slightly caramelized. Cook longer if needed.
  7. Serve:
    Serve hot, topped with fresh herbs if you like.

Tips & Tricks

  • Uniform Sizes: Cut potatoes into even-sized pieces so they cook evenly.
  • Crispier Results: Don’t overcrowd the air fryer basket. Cook in batches if needed.
  • Extra Flavor: Add a dash of chili flakes, rosemary, or your favorite seasoning blend for variety.

Storage

Store leftovers in the fridge for up to 3 days. Reheat in the air fryer at 375°F for 3–5 minutes to bring back the crisp.
