Ingredients

  • 2 cups cottage cheese (4% fat, small curd)
  • 4 tablespoons unsweetened cocoa powder (processed with alkali for a smoother chocolate flavor)
  • 1 teaspoon vanilla extract (you can also use almond, coconut, or orange extract)
  • 1 teaspoon stevia glycerite, heaping (equals 6 tablespoons of sweetener)

Instructions

  1. Add the cottage cheese, cocoa powder, vanilla extract, and sweetener to a food processor or a high-speed blender.
  2. Blend on high speed for 2 minutes. Stop once during blending to scrape down the sides using a spatula. Continue blending until the mixture becomes smooth and fluffy.
  3. Place the mousse in the refrigerator for 30 minutes so it thickens properly. Serve chilled.

Tips & Tricks

  • Use thick and creamy cottage cheese for the best texture. Watery cottage cheese can make the mousse less creamy.
  • If there is liquid on top of the cottage cheese, pour it off before using. Less water gives a smoother mousse.
  • A high-speed blender or food processor is important. A regular blender may leave the mousse lumpy.
  • Blend long enough to move through the stages—from grainy to smooth to fluffy.
