Grilled Chicken Margherita is one of those dishes that looks super elegant but can be made in just 30 minutes on your outdoor griddle.

INGREDIENTS:
- 2 large boneless, skinless chicken breasts
- 1 tsp olive oil
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 cup salted butter
- 1 tbsp lemon juice
- 2 cloves garlic minced
- 16Â grape tomatoes
- 4 slices mozzarella cheese
- 1/4 cup pesto sauce
INSTRUCTIONS:

Flatten + Season Chicken: Place each chicken breast in between two sheets of waxed paper and pound until they’re about 1/4-inch thick. Cut each breast in half. Rub both sides with olive oil and sprinkle with salt and pepper.

Prepare Sauce:Â Heat the griddle to medium heat. Place a small pot on the griddle. Add the butter. Once melted, stir in the lemon juice and garlic.

Cook Chicken:Â Place four separate spoonfuls of lemon butter onto the griddle. Add chicken on top of each spoonful. Cook for 4-5 minutes. Flip the chicken. Ladle another spoonful of butter onto each.

Cook Tomatoes:Â While the chicken is cooking, place the tomatoes on the griddle. Add a spoonful of butter onto the tomatoes and cook for 3-4 minutes, tossing occasionally.

Finishing Touches:Â Add a slice of mozzarella cheese on top of each piece of chicken. Top with a spoonful of pesto sauce and a spoonful of cooked tomatoes. Continue cooking until the cheese is melted.
