This sweet blueberry sauce is Keto friendly and has no added sugar. It’s perfect to serve over waffles, pancakes or cheesecake!

Ingredients:

  • 12 ounces fresh blueberries (I used frozen)
  • 1/4 cup swerve confectioners
  • 1 tablespoon fresh lemon juice
  • 1/4 cup water

Instructions:

  • Add the blueberries, Swerve, lemon juice and water to a sauce pan and cook over medium/low heat for 8-10 minutes.
  • The berries will start to break down and the sauce will thicken as it cooks.
  • Allow to cool before serving.
  • If you prefer a smooth sauce, you can blend it in a food processor, until you get your desired consistency.
  • Serve over ice cream, pancakes or cheesecake.
  • Store leftovers in an airtight jar for several days in the fridge.

Serving size is about 1 ½ tablespoons
