Air Fryer Apple Turnovers

These turnovers have a golden, flaky outside and a soft, sweet apple filling inside. The recipe is quick, simple, and perfect for fall or anytime you crave something sweet.


 Ingredients

Turnovers:

  • 1 pound puff pastry (sheets or blocks), thawed
  • 3 medium baking apples (peeled and chopped into ½” cubes)
  • 2 tablespoons salted butter
  • ¼ cup packed brown sugar
  • 2 tablespoons white sugar
  • ½ teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash) + a little water
  • Coarse sugar for topping (optional)

Glaze:

  • ½ cup powdered sugar
  • 1–2 tablespoons heavy cream
  • ¼ teaspoon vanilla extract

Instructions

Step 1: Cook the Apple Filling

  1. Heat a skillet over medium heat and melt the butter.
  2. Add chopped apples and stir to coat with butter. Cook for about 5 minutes until soft.
  3. Lower the heat. Add brown sugar, white sugar, cinnamon, and lemon juice. Mix well.
  4. Let the mixture simmer for 3 minutes until soft and caramelized.
  5. Remove from heat and let it cool.

Step 2: Prepare the Pastry

  1. Roll out puff pastry (if using a block) with a bit of flour into two 8–10 inch squares.
  2. Cut each large square into four smaller squares (you’ll have 8 total).
  3. Beat the egg with water to make egg wash. Set aside.

Step 3: Fill and Fold

  1. Place a spoonful of cooled apple filling in the center of each square.
  2. Brush egg wash around the edges, then fold over to make a triangle.
  3. Press the edges to seal and use a fork to crimp.
  4. Place folded turnovers on a tray or plate. Repeat with all 8 pieces.

Step 4: Air Fry the Turnovers

  1. Preheat your air fryer to 350°F for 3 minutes.
  2. Brush the tops of the turnovers with egg wash. Sprinkle with coarse sugar (optional).
  3. Place 2–3 turnovers (or more if space allows) in the basket.
  4. Cook for 11–15 minutes, until golden brown and puffed.
  5. Move cooked turnovers to a cooling rack. Repeat until all are done.

Step 5: Make and Add Glaze

  1. Mix powdered sugar, 1 tablespoon heavy cream, and vanilla in a bowl.
  2. Add more cream if needed to get a pourable glaze.
  3. Drizzle over the warm turnovers using a spoon.
  4. Serve and enjoy!

 Tips & Tricks

  • Best apples for baking: Granny Smith, Jonagold, Cortland, Honeycrisp, McIntosh, Braeburn, Golden Delicious, Gala, Northern Spy.
  • For best results, chill any turnovers waiting to be air fried.
  • Coarse sugar gives that perfect bakery-style crunch!

 Freezing

  • Freeze unbaked turnovers: Brush with egg wash, sprinkle sugar, and freeze flat.
  • Once frozen, transfer to a freezer bag.
  • Bake straight from the freezer or slightly thawed—just add extra time in the air fryer.

  5. Preheat air fryer to 350°F.
  6. Brush tops with egg wash, sprinkle sugar.
  7. Air fry 11–15 mins or until golden and puffed.
  8. Mix glaze and drizzle over warm turnovers. Enjoy!

 Notes

Use baking apples like Granny Smith or McIntosh.

  • You can freeze unbaked turnovers and air fry them later.
  • For thinner glaze, use more cream.
