  • 1/4 teaspoon dried rosemary
  • 1 tablespoon fresh parsley, finely chopped (for garnish)

Step-by-Step Instructions

  1. Prepare the Potatoes
    Start by washing the potatoes well under running water. Scrub off any dirt from the skin. Dry them completely using a clean kitchen towel or paper towel.
  2. Cut the Potatoes Carefully
    Place a potato on a cutting board. Using a sharp knife, slice the potato thinly across and then lengthwise. Be very careful not to cut all the way through the bottom. The slices should stay attached at the base so the potato holds together.
  3. Soften in the Microwave
    Put the sliced potatoes in the microwave. Cook on high power for 5 to 7 minutes, or until the potatoes start to feel soft. This step helps reduce air fryer cooking time and ensures the inside becomes fluffy.
  4. Preheat the Air Fryer
    Preheat your air fryer to 390°F (195°C) so it is hot and ready when the potatoes go in.
  5. Season the Potatoes
    Take the potatoes out of the microwave carefully. Brush them with olive oil or melted butter. Sprinkle salt, black pepper, garlic powder, dried rosemary, and dried thyme evenly over the potatoes. Make sure some seasoning goes between the slices.
